Dates & Walnuts Cake with Caramel Cardamom Sauce (includes Camel Milk)

As a resident of the UAE, I fell in love with its different cities and the various flavors the country has to offer. I made this cake using ingredients that reminded me of the UAE; mainly dates, cardamom and camel milk. I love experimenting in the Kitchen and this is what I came up with lately. Ingredients

– Cake-

  • ​250 g Dates
  • 1 teaspoon Bicarbonate Soda
  • 1 1/2 cup of boiling Water
  • 125 g Butter softened
  • 3/4 cup Brown Sugar
  • 1/2 teaspoon Almond Extract
  • 1/2 teaspoon Vanilla Extract
  • 3 Eggs
  • 2 cups Flour
  • 1 cup diced Walnuts
  • 1 pinch of Salt
  • 1 g Baking Powder

-Sauce-

  • ​1 cup Brown Sugar
  • 1/4 cup Water
  • 1/2 teaspoon Vanilla Extract
  • 60 g Butter
  • 300 ml Cooking Cream
  • 100 ml Camel Milk
  • 1 tablespoon Maple Syrup
  • 2 tablespoons Corn Flour (diluted in 2 tablespoons cold water)
  • 2 Cardamom Pods

-Decoration-

  • ​10- 15 Walnuts
  • 1/4 cup Brown Sugar
  • Water

Method

  1. ​Preheat the Oven at 180 C
  2. Grease & Flour a  Ring Pan
  3. Remove pits from Dates if any and place in a bowl. Pour over boiling Water and Bicarbonate Soda. Let it stand for 15 minutes. ( This will allow the dates to turn tender)
  4. Meanwhile, beat the Flour, Sugar, both Extracts (Vanilla & Almond) & Butter. Add the eggs one at a time.
  5. Toss the chopped Walnuts with Flour so they can disburse evenly in the cake.
  6. Add the Walnuts and the drained Dates to the mix and blend with a spatula.
  7. Pour into pan and bake for 30-35 minutes. (until golden).Let the cake sit for at least 10 minutes when done.
  8. For the sauce, pour the Brown Sugar, the Water and Maple Syrup to a sauce pan under medium heat. Wait until the Sugar is caramelized or to the color to turn darker. (it needs to boil a bit)
  9. Add the Butter, Camel Milk, Vanilla Extract, Cooking Cream, diluted Corn Flour and Cardamom Pods. Whisk the sauce until it boils. Let it simmer for 5 minutes on medium heat.
  10. Cool the sauce completely when done. Pour it over the cake or set aside for personal serving. (remove Cardamom Pods using a spoon)
  11. For decoration, heat the sugar and a bit of water (a drop or 2) till it caramelizes. Dip the Walnuts in the Caramel using toothpicks and let it sit till it thickens up. Decorate accordingly.
