Turkey Breast with Zaatar, Sumac & Freekeh

This recipe has all my favourite ingredients! If you’re opting for something healthy during the Holidays, try this yummylicious recipe! Turkey with Zaatar & Sumac Spices served with Freekeh is what you need this season!

Preparation Time: 10 minutes
Cooking Time: 1 hour
Serves: 4 people

Ingredients:

For Turkey

  • 3 tablespoons Sumac
  • 3 tablespoons Zaatar (Lebanese Thyme)
  • 1/8 tablespoon Honey
  • ½ tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Honey
  • 800 g Turkey Breast
  • Pomegranate for decoration

For Freeekeh

  • 2 cups Freekeh
  • 1 Onion, chopped finely
  • 1 teaspoon Olive Oil
  • 5 cups Chicken Stock

 

Directions:

  1. Mix the olive oil, sumac, zaatar, honey, salt & pepper well and rub all over the turkey breast. Marinate for 1 hour or more. (the longer the better)
  2. Preheat the oven to 200 C.
  3. Place the breast with skin side up into a roasting pan. Cover with aluminum foil and put inside the oven.
  4. After 30 minutes of cooking, remove the foil and let the breast cook for another 30 minutes uncovered.
  5. Meanwhile, in a pan, fry the chopped onions using a bit of olive oil until golden. Add the freekeh and the chicken stock and cover with lid until water is absorbed and freekeh is cooked. (30 minutes on medium heat)
  6. When both are done, lay the freekeh in a serving plate with cut turkey breast over it. Decorate with pomegranate.
